13. Visiting Friends

Being alone all the time has started to wear on me. I wouldn’t say that I am lonely, but humans are social beings and in-personal social opportunities for me have been non-existent. This past weekend, though, I had the wonderful opportunity to have some guests! Rebecca and Sarah came up to visit. We had an exciting, adventure-filled weekend and I am excited to share it with you!

On Friday when they got here we headed straight to a park to just hammock and chill. It took us forever to find trees that were small enough to fit hammock straps and also in a good position to fit two hammocks. We meal planned for the weekend while we were hammocking, and after packing up, headed to Winco. (Side note: I love Winco’s bulk section. They have almost anything you could want available. They have spices, nuts, flours, other baking needs, candy, beans, and grains. They only take cash or debit which is not something I usually have on me. I don’t shop there often, but when I can I do. It is glorious. Never in my life did I think I would have such strong feelings about a grocery store, but here we are lol)

Once we got back from shopping, we made sushi for dinner. Neither Sarah nor Rebecca had ever made it before, and I had a lot of fun teaching them how to arrange, roll and cut their sushi. They were amazed at how simple and easy it was. I love sushi as a meal because it can be so simple, and also very customizable. You can put whatever you want in it. My go-to is katsu-style tofu with cucumbers, carrots, and avocado. It is so good and so filling. After finishing dinner, and cleaning up the kitchen, we watched some movies before going to bed.

On Saturday, I made everyone sourdough pancakes for breakfast. We made some more sushi for lunch, then headed out to Mt. Spokane. The hike we planned to do was a trail that I had done before. It had a lookout tower and supposedly an amazing view at the top. (I say supposedly because when I did the trail in October, the weather was poor and I could not see five feet in front of me at the top.) When we got there, however, we realized that the trails we wanted to be hiking on were nordic ski trails…and they were all covered in snow. That didn’t stop us though. We found a small unkept trail and proceeded to do the whole six-mile round trip trekking through the snow without snowshoes. It was so worth it though. The view from the top was stunning. We were also able to take a break at the top and hammock under the lookout tower.

Back at the house, we all took hot showers and then just relaxed while watching some more movies. For dinner, we made buffalo cauliflower bite pizza. Let me just say this pizza is a lot of work, but the result is so worth it. After dinner, Rebecca and I did our best to try and teach Sarah some dance moves for a wedding she will be attending. We jumped around for what felt like forever, and Rebecca and I ended the night with a midnight stroll around the neighborhood.

On Sunday, we all woke up SO SORE. My calves, quads, and abs protested every single movement. For breakfast, Sarah showed me her quick doughnut recipe. You take some canned biscuits (like Pillsbury Doughboy, but they can be generic) and you cut them in half so they aren’t so thick. Then you work a hole into the center of them so they become a ring, and you fry them! They were surprisingly tasty. We coated them in cinnamon sugar to eat. After breakfast, we did some yoga to help our tired bodies. They headed out pretty soon after that.

I am so thankful for their visit. It was a nice change of pace from my normal routine. Now my trip to Rochester is less than a month away! I am ecstatic. I hope the rest of these weeks go by quickly.
