14. Creating with Rice and Yarn
I don’t know what happened to last week! It went by so fast. One second Rebecca and Sarah were leaving, and the next, it was Friday! Now, this is not me complaining, but it’s kind of crazy how quickly the time can fly by once you establish a daily routine.
I am not a person who eats sweets regularly. I got myself jelly beans for Easter. I forget about the fudge I made until I open the freezer, but never eat it because it’s never dessert time, so I forget about it all over again. But this week I wanted to try my hand at another dessert because I was craving something sweet. I had a couple of mangoes I had purchased a couple of weeks ago. They were just reaching a perfect ripeness and I wanted to do something with them. (Mangoes are my favorite fruit, by the way, followed closely by strawberries.) My idea was to make Thai sweet, sticky rice with mango. I’ve had this numerous times when getting Thai food. I love how light and delicious it is, and it has mangoes so what could go wrong there.
It is quite a simple recipe. I based what I did off of this site here. I, unfortunately, could not find the specific glutinous rice mentioned in the recipe. I ended up using average long-grain rice. Hindsight being 20/20, I would make sure to have the correct rice next time. What I ended up making wasn’t bad, but it didn’t have the right texture and that took away from the whole experience. To make this recipe you cook the rice (the glutinous rice needs to be soaked then steamed, but I just cooked my rice like normal). Then you make a sauce using coconut milk and sugar. Half of this sauce you add directly to the rice once it’s cooked, and the other half you thicken a bit and drizzle on top. Then you slice your mangoes and add everything together in a bowl. This recipe also suggests topping it with sesame seeds. I didn’t have any, but I would want to try that in the future. I think it would add a nuttiness to the dish that would contrast nicely with the sweetness of the rice and mango.
This weekend I also went on an unplanned shopping spree to Jo-Ann’s. I had just gone initially to get some stamps that I’ve been wanting to get for a while, but I ended up going home with a lot more. I first walked in and didn’t grab a cart. But then I had to do a walk of shame to the front of the store to get a cart to dump my armful of items into. What happened was I got sidetracked in the yarn aisle. I found the perfect colors for a project I’ve been thinking about for a while. I figured I was there, and they were all there, I might as well get them now. Then I also found this cute rainbow rug that gave me visions of my future home with Melissa, so of course, I had to get that too! After that, I finally made my way to the stamp aisle and got what I had originally intended to get.
I spent six hours on Sunday working on my project and got quite far into it. I don’t think it will take me as long as I thought, but that’s okay! Better to get started sooner than be late with it, especially considering I want it to be a gift
